Salted Caramel Cupcakes

Moist chocolate cupcakes with a salted caramel filling. To top it all of, salted caramel frosting!

This recipe will give 18-20 cupcakes.


Chocolate cupcakes:

  • 300 g caster sugar
  • 150 g unsalted butter (at room temperature)
  • 2 eggs
  • 300 g plain flour
  • 1/2 tsp of salt
  • 1/2 of bicarbonate of soda
  • 1 tsp of baking powder
  • 60 g of cocoa powder
  • 100 g melted dark chocolate
  • 220 g greek yoghurt
  • 200 ml vegetable oil

Salted Caramel:

  • 150 ml cold water
  • 250 g caster sugar
  • 225 ml heavy whipping cream
  • 1 tsp vanilla extract
  • 1 tsp sea salt

Salted Caramel Buttercream frosting:

  • 350 g unsalted (at room temperature)
  • 575 g icing sugar
  • 1 tsp vanilla extract
  • 1/2 tsp of salt
  • 1/3 of the salted caramel


  1. CUPCAKES: Beat the sugar and the butter together until white and fluffy. Then add the eggs one by one and beat the mixture together after each egg.
  2. Sift the dry ingredients into a seperate bowl. Fold the dry ingredients into the wet mixture.
  3. Add the melted chocolate, greek yoghurt and the vegetable oil and fold it all together.
  4. Fill your cupcake liners about 3/4. Bake the cupcakes into oven fro 18-20 minutes at 170°C.
  5. SALTED CARAMEL: put the water and the sugar into a medium sized sauce pan. Let it boil. It’s done when it reaches an amber colour. It will take about 10-15 minutes. Be aware because the mixture will be super hot. Do not stir because that can make the sugar crystallise.
  6. When it has reached an amber colour take the sauce pan of the heat. Add the cream slowly and keep mix. Then add the butter and the vanilla extract. Put the salted caramel into a heat proof jar and cool completely.
  7. FROSTING: beat the butter until white and fluffy. It will take about 5 – 7 minutes. Than add the sifted icing sugar. First ad half the icing sugar, mix, and then add the other half. Add the vanilla and the caramel.
  8. Poke a hole in the cupcake and fill with salted caramel. I find it the easiest to pipe a little bit of caramel into each cupcake. To finish the cupcake of pip the frosting on to the cupcake! And voila! A moist chocolate cupcake with a secret salted caramel filling.
