Pecan pie brownie squares

Hey people! Hope everything is awesome with you. The fall is really here now. It’s so cold here. Oh well, more time to be inside and bake 😉 Here is a recipe for Pecan pie brownie squares, perfect to bring on a pick-nick or a brunch for example.

Ingredients:

Brownie:

  • 275 g (10 ounces) dark chocolate
  • 100 g (3,5 ounces) unsalted butter
  • 2 tbsp olive oil
  • 120 g (1/2 cup) light brown sugar
  • 2 eggs
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 1 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 120 g (1/2 cup) flour

Pecan pie:

  • 2 tbsp liquide glucose
  • 80 g (1/3 cup) light brown sugar
  • 100 g (1/4 cup) caster sugar
  • 50 g (2 ounces) unsalted melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 200 g (7 ounces) pecan halves

 

Instructions:

  1. Brownie: Pre-heat the oven to 275°C (530°F). Melt the butter and chocolate together over a double boiler. When melted add the olive oil.
  2. Take of from the heat and stir in the sugar. Add the eggs and the vanilla extract, but do not blend it too much. It will result in a dry brownie.
  3. Add the dry ingredients. Put the batter in a 30×22 cm (12×8,5 in) baking tin and pre-bake in the oven for about 5 minutes.
  4. Pecan pie: stir the liquid glucose, light brown sugar, caster sugar, salt, and the butter together. Then add the egg and vanilla extract.
  5. Fold in the pecan halves.
  6. Pour the pecan pie batter over the brownie and bake in the oven for about 20 minutes or until the pecan pie batter achieves a light brown color.

Instruktioner:

SĂ€tt ugnen pĂ„ 275 grader. Brownie: SmĂ€lt chokladen (275 g) och osaltade smöret (100 g) över ett vattenbad. NĂ€r detta Ă€r smĂ€lt hĂ€ll i olivoljan (2 msk). Ta bort frĂ„n vĂ€rmen och blanda i ljust muscovadosocker(120 g). KnĂ€ck i Ă€ggen (2 Ă€gg, 1 gula), och hĂ€ll i vaniljextrakt (1 tsk). Blanda i de torra ingredienserna, kakao (3 msk), salt (1 tsk), bikarbonat (1/2 tsk) blanda inte mer Ă€n nödvĂ€ndigt dĂ„ det resulterar i en torr brownie. HĂ€ll i smeten i en form, 30×22 cm. FörgrĂ€dda i ugnen i ca 5 minuter. Peacanpaj: Blanda samman flytande glukos (2 msk), ljust muscovadosocker (80 g), socker (100 g), smĂ€lt osaltat smör (50 g) och salt (1/2 tsk). Blanda i Ă€gg (1) vaniljextrakt (1 tsk). VĂ€nd i pekannötshalvorna (200 g). HĂ€ll smeten över brownien och grĂ€dda i ugnen i 20 minuter, eller tills dess att pekanpajsmeten fĂ„tt en gyllenbrun fĂ€rg.
